Here is an easy delicious recipe that I have made for years, I have now made it gluten free and GMO free. Banana fritters can also use gluten flour for those not sensitive to gluten. They taste great either way.

Banana Fritters Gluten Free Ingredients

3 Bananas, peeled and sliced in two

2 eggs

2 tablespoons organic coconut flour

2 tablespoons almond flour

Not gluten sensitive (Substitute 4 tablespoons of wheat flour)

1 teaspoon baking powder

1/2 teaspoon guar gum

Water – about 1 cup

Banana Fritter Method

In a mixing jug beat the eggs together with a stick mixer

Add all other ingredients and beat adding water as needed.  You want the consistency of a cake batter. As the coconut flour absorbs moisture you may need to add a little more water.

Cut bananas

Pour the mixture over the sliced bananas and coat on both sides with the batter.

Heat a pan with a little coconut oil.  Always be careful not to let the oil smoke as that will indicate that it is too hot and therefore unhealthy.  If it smokes, take a paper towel and wipe it out of the pan and start again with fresh coconut oil.

With a moderate to hot heat cook the banana fritter until golden and then turn them over and cook the other side. Plate them up, use a little creativity and you will surely impress.
