On a low carb or ketogenic diet, many miss being able to have bread. This is Chia bread, it is very versatile and can be used in many sweet or savory low carb snacks and meals. Like any bread, it is hard not to eat too much of it because it is quite delicious.
Chia Bread Ingredients
The recipe will make 16 pieces of chia bread, depending on the size you require.
6 eggs separated
Pinch of salt
250 g of cream cheese or coconut cream – at room temperature
2 tablespoons of chia seeds
1 rounded tablespoon of psyllium husks
1 rounded teaspoon of baking powder
Small amount of Stevia (optional)
Chia Bread Method
Heat the oven to 350 F
Place cooking paper on a large tray and grease it with coconut oil.
Mix the cream cheese, egg yolks, baking powder and psyllium husks
Sprinkle the chia seeds over the egg yolk and cream cheese and mix all the ingredients together well.
Beat the egg whites and salt until it is very thick.
Fold the egg whites into the egg yolk mix. Don’t over mix it as you want to retain the air in the mix.
Place in large spoonfuls on the tray, leaving room for them to spread.
