Creamy Broccoli Soup [Low carb anti-inflammatory]
This creamy broccoli soup is both healthy and anti-inflammatory. The soup sits so well in the tummy, no bloating or discomfort. It has a gentle spicy flavor and made creamy with avocado. It is dairy free, GMO free, grain free, gluten free and absolutely delicious.
Creamy Broccoli Soup [anti-inflammatory]

Many foods that we eat can increase inflammation – this creamy broccoli soup is one awesome recipe to help combat inflammation. Quick and easy to make. Add this recipe to your low carb list along with our Low Carb Cottage Pie.
Creamy Broccoli Soup Ingredients
1 head of broccoli – roughly chopped – cut the hard layer from the stalk and chop the stalk up as well.
1 avocado (this is not added until the last step)
2-3 inches of leek chopped
2 tablespoons of Coconut Aminos
1 teaspoon of curry powder
2 tablespoons of chia seeds
Creamy Broccoli Soup Method
Half-fill a large saucepan with water, (the water should cover the ingredients – adjust as necessary) start heating the water as you add the ingredients.
Add the chia seeds first and stir well so that they don’t all clump together.
Add all the other ingredients except the avocado.
Cook until the broccoli is tender.
Turn the heat off.
Add the avocado.
Using a stick blender, blend all these ingredients together.
Keep blending until it is smooth.
Now is the time to do a taste test. This will depend on your family and their preferences. We like a little hot kick so I may add a little more curry or even a sprinkle of hot sauce. This recipe is deliberately free from added salt. If you get the other flavors right, you will not miss the salt. The Coconut Aminos does contain salt, I use the barbecue one as it has the least salt.

I love broccoli soup, and as you and I have discussed, anything anti-inflammatory is a good thing these days. I have never heard of coconut aminos; I will have to look it up and see where I can get it. Is it a flavoring or is it something that changes the consistency/ structure of the soup? Thanks Wendy. I would usually flavor it with Tamari a healthier soy sauce, but I am trying to avoid soy. So it is just a flavoring and it does add a little salt.
