There is nothing like a cracker snack. You will love these crisp cracker snacks with no grains, no gluten, and very low carb. One of the great things is how satisfied you feel after eating them.

Crisp Cracker Snacks no Grains Low Carbs

The crispy crackers have become a regular snack in our house. The original recipe is from the ‘dietdoctor,’ they do not grind the seeds.  I have made a number of changes and grinding most of the seeds not only releases the nutrients, it is much kinder on the tummy.

Using seeds, especially ground seeds, the oven must not exceed 300 F (150 C).  The seeds should be used as soon as they are ground or place them in the freezer to preserve the delicate oils.

Ingredients Crisp Cracker Snacks no Grains Low Carbs

  • 13 cup almond flour or extra sesame seeds (I go half & half here)
  • 13 cup ground sunflower seeds
  • 13 cup ground pumpkin seeds
  • 13 cup ground sesame seeds
  • 13 cup chia seeds (Not ground)
  • 1.5  tablespoon psyllium husk or 1 tablespoon powder


  • 1 teaspoon salt (optional)
  • 4 tablespoons melted coconut oil
  • 1 cup boiling water
  • Baking paper lined flat tray


Method for Crispy Crackers

This is so simple –

Mix all the dry ingredients together.

Add the boiling water and oil to the dry ingredients. Stir well. The wonderful soluble fiber comes out of the seeds and thickens the mixture.

Take a spatula with a little oil on it and smooth the batter out into the flat tray. Depending on the size of the tray, you may need two trays. You will want the mixture to be spread thinly so that they will become nice and crisp. Sprinkle with salt and pepper or a herb of your choice.

Place in the oven 300 F for about 45 minutes to an hour. Take the tray out and cut the mixture into cracker sizes.

Reduce the oven temperature to 250 F and cook the crackers for another 20 minutes. Turn the oven off and leave the tray in until it cools down.

You want the mixture to dry out but do not burn it.  The time depends on the thickness of the mixture on the tray.

Not crisp enough to your liking, put them back into a low temp to dry them a little more. I really like these crackers crisp on the outside and a little softer in the center. So I would keep the spread a little thicker.

Grind up an extra quantity of the seeds and store them in the freezer. Next time you need crackers just add the boiling water and oil and they are ready to go.
