I do have a sweet tooth and love desserts but I like to balance with some savory flavors as well. On a restricted diet finding snacks can be a challenge and it is often the area where we stumble if we are not prepared. My healthy savory loaf is just the snack to keep handy to go with a tea or coffee. The healthy savory loaf has to be gluten free, dairy free, low carb, GMO free, anti-inflammatory and taste like one slice is not enough.
Healthy Savory Loaf – Gluten Free Dairy Free
Healthy Savory Loaf Ingredients
The following amounts are to make two loaf size cakes
Where possible I use certified Organic products.
1 cup of all-purpose gluten free flour (Check it at IHerb)
2 cups almond flour (Check it at IHerb)
1/4 cup of psyllium husks
2 good teaspoons of baking powder
6 eggs
8 tablespoons of soft coconut oil
1/2 cup of Linseed seeds (whole, not ground)
1/2 cup pepita seeds (Pumpkin seeds)
2 tablespoons of Coconut Aminos (or another sauce flavor)
1 heaped teaspoon of curry powder
1 tomato – diced
3 inches of a leek – chopped
Small amount of Stevia
Extra liquid may be water, or coconut milk or almond milk
Healthy Savory Loaf Method
Generously grease two loaf pans
Saute the chopped leek
Mix the sauteed leek with the diced tomato together, grind some fresh pepper or other herbs over the mix.
The first time I made this savory loaf I added some nitrate free bacon, that was nice so we will say it is optional.
1.Beat the eggs, coconut oil, stevia, sauce, baking powder and curry powder.
2. Add the tomato mix and the seeds.
3. Mix the flours and psyllium and add to the egg mix.
4. Add extra liquid if needed, it is a fairly stiff batter.
5. Rest the mix for a few minutes as the psyllium and chia will soak up moisture. You may need to add a little more liquid.
6. Divide the mixture between the two pans. Add some nuts or seeds to the top.
Cook in a moderate oven for around 40 minutes. After 30 minutes use a skewer to test the cake, leave longer if needed. Don’t overcook it or it will dry out too much.
After the cake is removed from the oven and cooled a little, run a knife around the edge and remove from the loaf pan.

An alternative flour –
is to use 1 and 1/4 cups of coconut flour instead of the almond flour.
- This mix will absorb quite a bit more moisture.
- It is less expensive than almond flour.
- It has a little more carbohydrate but the fat content is healthier and less inflammatory.

The healthy savory loaf is great hot or cold. If you want to heat the slices, just place the slices on some foil and spread a tablespoon of water across the slices. Wrap the foil over the slices and place in the oven to heat.

If you accidently overcooked or for some reason the loaf is a little dry, doing the above will make the loaf nice and moist again.
Remove the foil package from the oven and spread the slices with avocado and top with fresh pepper. If you have butter, this savory slice tastes very nice spread with organic butter.
You are all set for a healthy savory snack. Keep the loaf covered in the fridge ready to satisfy the hungries.

Flaxseeds – Omega 3’s, anti-inflammatory, antioxidants with a wide range of healthy benefits.

Curry Powder – Curry powder is made of many herbs and spices. Probably the most valuable spice found in all curry powders is Turmeric.
