I have heard about cauliflower rice for some time, however, I rejected it as a fad and not a true alternative to rice. After seeing several favorable reports and then seeing low carb cauliflower rice being sold in the supermarket, I had to try it out.
Low carb cauliflower rice recipe
I have always loved fried rice, so this is my recipe for cauliflower fried rice.

Ingredients serving for two – cauliflower rice
1/2 medium cauliflower – grated
2-3 inches of fresh ginger – grated
3 tablespoons of Rice Aminos
Additional ingredients to accompany the rice
3 cups of frozen vegetables – a stir fry mix of vegetables goes well
Extra chopped vegetables
1 stalk of celery
1 doz. sugar peas
1/4 of a red pepper
Pepper Sauce (optional) additional Rice Aminos
2 rashers bacon or ham
2 inches of sliced leek
Low carb cauliflower rice [Fried Rice] Method
Cover the bottom of a skillet with coconut oil. Use medium heat, never overheat oils.
Add the grated fresh ginger and Rice Aminos. As it heats use a wooden spatula and keep mixing these ingredients together for a few minutes.
Add a little more coconut oil and then the cauliflower rice. Heating, stirring and mixing until the ginger mix is thoroughly through the cauliflower rice. This will take around five minutes.
Remove the cauliflower mix and set aside on a plate.
Add a little oil to the pan and cook the bacon or ham with the leek. Set aside, break into pieces when cool.
Mix two eggs together with a fork, add more oil if necessary, cook the eggs. Remove from the pan and cut into rough pieces.
Stir fry the frozen vegetables, add 2 tablespoons of coconut Aminos. If you like a little spice add some peppercorn sauce, it really adds to the flavor.
Add the rice mix to the vegetables, then the egg and bacon pieces. Mix through and add the extra chopped vegetables. Mix them until all is heated. Tip: I cooked the whole grated cauliflower rice. I used half in this recipe and then I froze the other half. The next time I make a cauliflower rice dish, I just have to thaw it, and a meal is on the way.
