Best Low Carb Cottage Pie (6 carbs)
The meal my scales and I love
You could serve this low carb cottage pie to anyone and they will never recognize that there is not a potato in sight. Try our low carb Fried Rice it is awesome.
Here we go, it is so easy –

Ingredients for Low Carb Cottage Pie
500g (1lb) hamburger mince
Med onion or 3 inches of leek
2 cups of low carb frozen vegetables (e.g. no potato, sweet potato or corn)
Your favorite savory flavorings.
These are three of my favorite flavors
I used the three of these in my cottage pie.
Use any savory favorites just keep a watch on their carbohydrate content.
Other ingredients for the top of the pie
1 medium cauliflower
2 tablespoons of butter
2 tablespoons of fresh cream
A little salt and pepper to taste
1 cup of grated tasty cheese
Method for Low Carb Cottage Pie
Brown the mince in a pan along with the onion
Add the flavorings
Add the frozen vegetables
Cover and cook until the vegetables are tender.
Wash and cut the cauliflower into pieces. The cauliflower can be boiled in a small amount of water or it can be steamed.
Do not overcook the cauliflower. Use a sharp knife to test if it is cooked. If it does overcook, don’t worry, the topping will be not so firm but will still taste great.
When the cauliflower is just tender, drain off as much water as possible. Us a masher to break up the cauliflower and then use a stick blender to make a smooth topping. Add the butter and cream, salt and pepper. I also like to add a teaspoon of curry powder. Blend everything together, it should be thick and smooth.
Place the cooked meat and vegetables in a casserole dish

Now add the topping and the cheese

Place in a moderate oven. The ingredients are already cooked so leave it in the oven long enough to melt the cheese and slightly brown the top.
A generous serve of this delicious low carb cottage pie would yield 6-10 carbs.

Thanks Sue, yes cauliflower is a great alternative. In this recipe you can’t tell it is not potato mash. (This colder weather is a bit sudden although I was ready for a change in humidity.)

Kathleen, just reading this recipe makes me want to try it. I’ve never tried the cauliflower rice option but know it’s popular among the Low Carb people.
I’m actually going to give this a go to see how I like it. I’m not a big cauliflower fan, but with the savory ingredients, I think it might mask the flavor. (is there something to mask the smell???) ^_^

Thanks for the comments Sara. I know what you mean by the odour. The key is to make sure the cauliflower is fresh, cook it and either freeze it or use it. Any leaves or scraps should be disposed of right away and you should not have any lingering odour.

Kathleen, what I like about this cottage pie, not only that it is low carb, it contains all the macronutrients in one and so can be eaten solely alone as a meal.
