Most meatloaf recipes have a high carb ingredient like bread crumbs or rolled oats. We are avoiding these ingredients and replacing them with some wonderful nutritious and low carb goodness.
Meatloaf Low Carb Nutrition
The following recipe will make two meatloaves. They freeze well so put one meatloaf in the freezer ready for a quick meal.
Meatloaf low carb nutrition – Ingredients
- 1kg beef mince
- 5 eggs
- 4 tablespoons of Chia seeds
- 2 tablespoons of linseeds
- 2 tablespoons of pepitas (pumpkin seeds)
- 2 tablespoons of sunflower seeds
Note: either of the above two ingredients could be substituted with nuts. If you prefer not to chew the seeds, put them together and blend them in a blender. Blending them would release more of their goodness. Don’t blend the Chia seeds or the Linseeds as their oils may not be stable when heated.
- 1 grated carrot
- 2-3 inches of chopped leek (or onion)
- 2 heaped teaspoons of curry powder (adjust to taste and brand)
- 2 tablespoons of peppercorn sauce
- 4 tablespoons of Coconut Amino
Mix all the ingredients together and let it rest for 15 minutes to allow the seeds to swell.
Halve the mixture and place in two loaf pans.
I sliced tomato on the top with some grated cheese and chopped parsley.
Cook in a moderate oven for 30-40 minutes. Cover the tops with foil for the first 20 minutes.Meatloaf, the high carb ingredients are replaced with low carb nutrition. Click To Tweet
The meatloaf is very tasty; it can be served hot or cold. Hot vegetables and gravy or salad go well with it. It slices well to make a sandwich.
